Climate change poses a serious challenge to all agricultural producers, but bold ideas can turn the tide. Climate change has adversely affected most traditional plant crops in Europe. For example, in the case of potatoes, a staple food, the question has recently arisen whether its cultivation can indeed be excluded from Hungary. The ease of processing and relatively fast growth cycle of potatoes have made them popular here, but extreme weather phenomena, as well as unpredictable precipitation distribution and temperature extremes, no longer make successful cultivation possible everywhere. Currently, Hungary represents the southern boundary of potato cultivation, but it is easy to imagine that this boundary will soon shift further north. The plant requires 500–600 mm of precipitation to meet its water needs, primarily during the hottest months, but this seems almost impossible to achieve in light of the country's dry summers.
