Between January and November, seven fishing companies in the Sea of Japan subzone caught a total of 837 tons of gray sea urchin, with 47.9% by coastal companies and 52.1% by offshore companies, nearly reaching the industrial catch quota. The majority of the catch, 504 tons, was by offshore companies. Gray sea urchin, a product with numerous health benefits including being used in biological supplements and drugs, is highly valued for its caviar which is rich in Omega-3 and Omega-6, vitamins, and microelements. It is mainly exported to Japan, but also sold domestically. Due to its short shelf life, a freeze-drying technology has been developed to extend its freshness, and it is often combined with natural honey to enhance its benefits.
