A rare albino sturgeon breeding facility in Austria, run by Walter Groul and his daughter Alexandra, is producing the world's most expensive caviar, selling for three times the price of black caviar. The eggs, which are tender and light in color, are raised from 16-year-old female sturgeons and exported to countries such as Germany, Italy, and Spain. The business has seen an increase in retail sales during the COVID-19 crisis, despite a decrease in restaurant and hotel orders. The facility, which is located near Hellbrunn Palace and is well-protected from theft, is one of only 30 to 40 farms worldwide that produce white caviar. The breeding of sturgeon for caviar is becoming increasingly popular as a way to preserve the species, which is endangered due to overfishing and pollution.
