Yerba mate is one of the most consumed infusions in the Southern Cone, being of enormous importance in countries such as Argentina, Paraguay, Uruguay, and Brazil. In our country, it constitutes one of the main regional economies in the northeast of the country and is characterized by a production chain rooted in the territory and highly labor-intensive. In this sense, its production chain consists of 3 stages, starting with the primary production stage, where the green yerba mate leaf is harvested; then a first industrialization in which canchada yerba mate is obtained through a drying and coarse crushing process, which after being stored for between 6 and 24 months moves on to the final stage of fine grinding and fractionation. With an average annual consumption close to six kilos of yerba per person per year, internal consumption shows a recovery in this 2025.
