In 2022, Lower Saxony saw a decrease in the number of farms growing vegetables outdoors by 4.3%, reducing the cultivation area by 1.9% and the harvest volume by 11.0%. However, there was a significant 33.3% increase in kale cultivation, with a harvest of 6,354 tons from an area of about 397 hectares. Despite the pandemic, the organic sector also saw an increase in kale cultivation, with 130 farms cultivating on around 24.6 hectares, resulting in a harvest of 265 tons. However, the outdoor cultivation area for these farms decreased by 15.6% in 2022. The organically produced harvest made up 10.8% of the total Lower Saxony vegetable harvest in the open field, with a volume of 61,927 tons, marking a 24.4% decrease from the previous year.
