The Swiss retail trade has seen a significant increase in the demand for meat substitutes, with a turnover of 117 million francs in 2020, up from 60 million in 2016. This represents a market growth of 18.4% per year. Despite this growth, meat substitutes still account for only 2.3% of the retail market. The most popular meat substitutes are vegetarian burgers, with one in six burgers sold in retail being plant-based. The demand for these products is highest in young, high-income German-speaking families living in urban areas. The Federal Office for Agriculture (FOAG) study also identifies a potential opportunity for Swiss agriculture in the production of vegetable raw materials for meat substitutes, as currently, almost all of these raw materials are imported.
