The country's gastronomy relies heavily on chili peppers, rocotos, and other varieties, with small family farmers playing a crucial role in their production. Peru is the third-largest exporter of capsicum fruits, including yellow and panca chili peppers, sauces, preserves, and dried fruits, with Mexico, the United States, and Spain being the primary markets. In 2023, Peru exported 37,756 tons of paprika, valued at US$ 149 million, marking a 6% increase in volume and a 33% increase in value from the previous year.
