On the one hand, Christmas and New Year's fall on Wednesdays and Thursdays, so keeping livestock in the pens on those two days is costly and results in lost productivity. Additionally, it will be difficult to gather the necessary crews to slaughter on the following Friday. Therefore, those two weeks will then have only two working days.
