The sea bream, also known as gilt-head bream in Italy (Sparus aurata), is a native Italian fish characterized by its white flesh and medium-low lipid content. Italy's coastal waters are home to five different species of sea bream. The fish is usually processed into bottarga, a product made by salting and aging its ovarian sacs. Sea bream farming is prevalent along the Italian coasts. In Mar-24, prices for sea bream range from USD 5.45 to 10.90 per kilogram (kg), with an average size of 300/400 grams (g).
