A 3kg H&G Cod fish processed into fillets (skinless & boneless) will have an average loss of 42%. As a result, from a 3kg H&G Cod, a processor will have two main fillets totaling 1.74 kg. Of the two main fillets, parts are often 50% Loin, 30% Portions, and 20% Cod bellies (348g). Cod bellies are one of the most demanded products in Portugal to process into “Migas”. From the 348g of fresh belly fillet, an additional 30-40% is lost when processing the final product, "Migas" (salting process of 15 days). The net weight of the final "Migas" weighs around 208g to 243g.
