South Korea's rice production fell by 1.6% in 2023, with a total final production of 3.702 million tons of milled rice, and the area under rice cultivation decreased by 2.6% compared to the previous year. The government introduced incentives to reduce traditional rice plantings and prioritize the conversion of high-yielding rice varieties into higher quality varieties with superior taste, as well as encouraged increased production of rice for flour through new subsidies and support for the development of new products. Additionally, the recent discovery that flour rice can reduce methane emissions compared with conventional rice varieties may influence future increases in rice flour area, according to the US Department of Agriculture's Foreign Agricultural Service.
