Known as Gur in India, jaggery is a traditional sweetener with a rich history and cultural significance. It is produced by concentrating sugarcane juice through traditional methods. Jaggery is recognized as one of the healthiest sugars globally. According to the Agricultural and Processed Food Products Export Development Authority (APEDA), India holds a prominent position in both the production and consumption of jaggery, contributing to over 70% of the world's total production. According to APEDA data, Indian jaggery exports significantly transformed over the past few years. From 1.17 million metric tons (mmt) in 2018/19, there was a remarkable surge to 6.33 mmt in 2021/22, indicating a substantial increase of 441% in just three years. This surge was primarily attributed to a growing global demand for Indian jaggery.
