Jaggery is recognized as one of the healthiest sugars globally. According to the Agricultural and Processed Food Products Export Development Authority (APEDA), India holds a prominent position in both the production and consumption of jaggery, contributing to over 70% of the world's total production. According to APEDA data, Indian jaggery exports significantly transformed over the past few years. From 1.17 million metric tons (mmt) in 2018/19, there was a remarkable surge to 6.33 mmt in 2021/22, indicating a substantial increase of 441% in just three years. This surge was primarily attributed to a growing global demand for Indian jaggery.
